What's for Dinner Tonight? Corn Flake Chicken
This is comfort food.
I first made this not long after I was married.
One night my brother-in-law stopped over while I was preparing dinner.
He had never had corn flake chicken.
He was intrigued.
He watched me make this recipe.
He kept saying "Is that you are doing with the chicken?"
I kept telling him, "Just trust me!"

I made mashed potatoes and green beans that night to go along with the chicken.
He was blown away.
Every now and then he will ask for that meal! That is a compliment!
My son loves this recipe!
When I made this I did make mashed potatoes.
I had frozen mixed vegetables that I also made as a side dish.
I love cranberry sauce with chicken.
I did not have any cranberry sauce.
But I did have apple sauce!
That was a fantastic combination!
It may sound odd, but it worked!
You have to experiment when cooking!
This is how you find out likes/dislikes!
Line a pan with heavy duty aluminum foil (Again, I purchase mine from Walmart).
Spray the foil with spray oil.

I had some chicken thighs in the freezer.
I took the chicken out a day ahead and left the chicken in the refrigerator to thaw.
Once thawed, I removed the skin.
Now onto the assembly!
First take a plastic resealable bag. I used a gallon bag. Fill it half way with corn flakes.
Add some seasoning- 1/2 teaspoon each of Kosher/Coarse salt, black pepper and garlic powder.

Now comes the fun part!
Take the air out of the bad and seal the bag.
Then start crushing the flakes with your hands.
This also works as a stress reliever!
Do not make them into a fine powder.
Crush them into smaller pieces.
You want a bit of texture!
Then shake the flakes and seasoning in the bag to mix!
Again, a bit of a stress reliever!
Next, add some milk to a small/medium sized bowl.
I have also used sour cream, plain yogurt and buttermilk at this point to coat the chicken.
I used milk since that is what I had on hand.
Take a piece of chicken and dip it (roll it/flip it) into the milk or whatever you have decided to use to coat the chicken.
Take the chicken out of the milk and place the chicken in the plastic bag with the corn flake mixture.
Seal the bag and shake!
This is a win win- getting some stress relief and making dinner!
Once the chicken is coated, remove from bag and place on spray coated pan.
Repeat until all chicken is coated and placed on pan.
Bake in preheated 375 degree oven for approximately 30-35 minutes.
Remove from oven and serve!
The chicken will be juicy and tasty!
