Tomato Artichoke Bisque is What's for Dinner Tonight
My sister in law and I went out for dinner one night.
She told me I had to try the soup!
I thought it was odd. Normally I do not go out dinner for soup!
I took one bite and was hooked!
It was fabulous!
I loved it so much, that I decided to try and duplicate the recipe!
I was successful!
Start by chopping 1 medium sized onion. If you do not want to attempt chopping an onion, purchase pre-chopped onions. You will need about 1 cup of pre-chopped onion. Also, chop 1 clove of garlic. Again, if you are like me, I keep a jar of mined garlic in my refrigerator. Use 1 heaping teaspoon of minced garlic.
Next, in a large pot, melt about 2 tablespoons of butter over medium heat.
Saute the onions and garlic until translucent. About 2-3 minutes.
Add 3 bay leaves.
Cut the artichokes into smaller pieces.
Add to the pot.
Next add the tomatoes, 1 cup of water, 1/2 teaspoon of dried oregano and 1 teaspoon of dried basil.
Turn down to a simmer (low). Simmer for 10-15 minutes.
This is the messy part- maybe.
It is time to blend the soup.
If you have an immersion blender, use it!
No immersion blender?
Food processor? Blender?
I have a blender.
Fill the blender or food processor 1/4 full and blend. I do not like it very smooth. I like a bit of texture. This is totally up to your taste!
After blending, remove and put in a large bowl.
Keep alternating until all soup is blended.
Return to pot . Add 1 cup of milk.
Heat for another 5 minutes.
Once heated, ladle into bowls.
Top with croutons and enjoy!
Ingredients:
28 oz can fire-roasted diced tomatoes
15 oz can artichokes in water
1 cup water
1 cup milk
2 tablespoons unsalted butter
1 large onion
1 clove garlic
3 bay leaves
1/2 teaspoon oregano
1 teaspoon basil
Croutons:
If you have Italian or French bread, cut the bread into thick pieces.
No Italian or French Bread? Use whatever bread you have!
Spread butter on bread (both sides of bread). Sprinkle garlic powder on bread. If you have grated cheese, you can sprinkle cheese on the bread too!
Put under broiler and cook until golden. Flip bread and cook until golden.
Once toasted, cut into bite sized pieces.
