Apple Cinnamon Doggie Cookies

Recently we became a dog family  🐶 We now have a puppy!  He is currently 10 weeks old. I am in love! 💙 My fury little boy. He he is spoiled.... lots of hugs, kisses, toys and of course love! He is eating healthy, per Doctor's orders! He does not get the leftovers from our dinner. He loves sweet potatoes, carrots, potatoes, blueberries, strawberries, plain yogurt, puppacinos and of course doggie ice cream! But, this recipe is for his absolute favorite (so far) dessert- Apple Cinnamon Cookies. 2 1/2 cups quick cooking oats 1 cup apple cinnamon applesauce 2 large egg Take 2 cups of oats, put in blender or  food processor. Blend until consistency of flour. Add the oats plus the remaining 1/2 cup flour, applesauce and eggs in a  large bowl.  Mix well. Drop by spoonful onto a parchment lined cookie tray. I shaped mine - Just used the spatula and shaped them.  They should not be too thick for a puppy! Bake in a 350 degree oven for 20 minutes or until lightly golden brown. Let cool and l

What's For Dinner Tonight? Meatloaf

Some look at meatloaf as boring! That's because, you have never had MY meatloaf! I have been making my meatloaf this way for many years. It started out innocently.  I did not have enough bread to make meatloaf. I thought what could I use to substitute the bread?! The same thing happened one day when I did not have any onions. This recipe was re-vamped twice into this recipe! First start off with 2 pounds of ground beef (any type you prefer), or ground chicken or turkey. Add to the ground meat, 1 large egg. No eggs? Use 1 heaping tablespoon of applesauce! Add 3/4 cup milk (any type). Salt and Pepper to taste. IF you have an onion, chop up 1 small onion and add. No onion?! Add either chopped/mined garlic or 1 teaspoon of garlic powder. I use the garlic or garlic powder. I prefer the taste! Now comes the "breading." The thing that changes this meatloaf  from boring old meatloaf to meatloaf that will wow anyone! Crack

What's for lunch (or dinner)? Leftover Quesadilla !

I had some leftover chicken and thought what could I do differently with the chicken? I asked everyone what they thought of quesadillas? Of course they said yes! I started by cutting up the leftover chicken. I layered the chicken on a flour tortilla on a parchment lined cookie sheet. Added cheese.  I had a Mexican blend I had purchased. You can use whatever you like and have already. Next put on another tortilla. Spray with spray oil. Put in oven on broil. Watch the quesadillas! Once they start to brown, flip them over. Add spray oil to this side of the quesadilla. When the other side is brown, the quesadilla's are done! Cut into wedges. Add sour cream and salsa. Side salad Coleslaw Or nothing! This is just a way to use up leftovers. Something different, easy and tasty! Enjoy!

What's going with dinner tonight? Drunken Onions

I had these onions for the first time a few years ago while on a business trip.  We went to a burger place and they had these onions on most of the burgers. I fell in love instantly! 💓 I called home and told my husband I had just had the best burger ever and it was due to the onions! 🧅 When I got back home I could not wait to try and duplicate! I have made these many times since. I made a pizza with these onions. Homemade dough and these onions. OH MY! Add a glass of wine.... heaven!  This is such a simple recipe. It wow's everyone! My thoughts from the nursing home

I have the utmost respect for all those that are working at this time making things better for those of us that are home. All the caregivers at the hospitals, those working at grocery stores, etc. But, many are forgetting those that are in nursing homes and those that are caring for the residents. My family and I have not been able to see our mother, in person, for over a month. We FaceTime with her often! We are grateful to her care givers for not only caring for her, but setting up the FaceTime with her.  They have been wonderful since her first day there. There are several residents that have had the virus and that currently have the virus. A few have died from the virus. These people will be missed. They have become part of our extended family.  These people- those in nursing homes and those caring for those in nursing homes- also need our love, admiration and support! We have been sending food and other items each week to brighten their days. This is what my mother s

Thoughts during this time

With all that is going on in the world,  I am trying to find at least 1 bright spot each day! In each day I am trying to find:  Gratitude Thankfulness  Appreciation  And Love I am grateful that we are all together and healthy. I am trying not to dwell on the fact that I cannot visit  in person, my family and friends. I am still visiting with them, but in a different way. I am Face Timing with them all! No one cares how you look- I may be in my comfy pants and shirt, no make up, etc but we are still sharing time, comforting each other, laughing, sharing meals,  drinks (both alcoholic and non-alcoholic), holidays and events! Both my children's birthdays were shared via FaceTime this year. My daughter received a surprise for her birthday. A friend came over- social distance of course-  stood outside and played Happy Birthday on her viola for her!  That was one of the nicest things that anyone could have done!
