What's for Dessert Tonight- Champagne Brownies

What more could you ask? A brownie made with champagne!


These are a “blonde” brownie. 


For those that have never had a “blonde” brownie, you have missed out! 


My high school made “blondies” on special occasions for dessert at lunchtime.  To this day, when I have any version of a “blonde” brownie, it takes me back to high school! 


Make this recipe your own!
If you prefer dark chocolate chips, white chocolate chips, butterscotch chips, caramel chips or a mixture, have fun with this recipe! 


This is an easy recipe!


One of my family’s favorite desserts!


Start by creaming unsalted butter and brown sugar. 
The butter should be soft. 


If you are like most people, you don't think about leaving butter out to soften!
I am one of those people!
I put the unsalted butter in the microwave for 18 seconds and it comes out perfect!
Cut the butter into several pieces and add to the brown sugar.




The easiest way to cream butter and sugar is by using the paddle attachment on your stand mixer. You can also use a hand mixer or mix by hand, it will just take longer. 


If using a stand mixer, mix for approximately 4-5 minutes.




Add 1 large egg and vanilla extract.




Mix until well incorporated.


 


Add champagne!



Mix!


It will look weird. As though you did something wrong.
As though your ingredients curdled!

 


Add dry ingredients- all purpose flour, baking powder and coarse/Kosher salt.



Mix until well incorporated.




Add 1 bag of semi sweet mini chocolate chips. I always use mini chocolate chips. 
WHY?
 You always get chocolate chips in every bite! 



Do not over mix. Just mix until blended!



Once mix, spread into 8x8 greased pan. 
I grease with spray oil.
I use a glass pan. 
After always burning brownies in dark coated pans, I tried a glass pan.
I have not burned brownies since switching!
A bonus was that my pan came with a cover. Therefore (if there are leftovers), I do not need foil or plastic wrap! I have a cover for the pan!


 


Put pan into pre-heated 350 degree oven.


Bake for approximately 22- 25 minutes. To check to make sure done- stick a sharp knife or wooden/metal skewer (this is what I use) into center and it comes out clean.






If you are the type that likes frosting, once cooled, add frosting/drizzle!


Combine confectioners’ sugar and champagne.
Mix until smooth.


Drizzle or frost brownies.


Add a glass of champagne to drink !

Ingredients


½ cup unsalted butter (1 stick), softened
1 cup packed light brown sugar
1 large egg
1 teaspoon vanilla
¼ cup champagne
1 ¼ cups all purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 package (12 oz) mini chocolate chips


Glaze/Frosting
1 cup confectioners’ sugar
2-3 tablespoons champagne
