What's For Dinner Tonight? Macaroni & Meatballs

Growing up I looked forward to Sunday dinner.
I knew we were having macaroni, meatballs, other meats in the sauce and a vegetable.
The sauce simmering was wonderful!
We would go to the bakery and get a loaf of Italian bread (and extra to nibble  on the way home).
Ripping off a piece of that fresh Italian bread and dipping it into the sauce was the best!

I have tried to duplicate those meatballs. I have tried so many recipes including my sister-in-law's recipe and my mother-in-law's recipe! I tried baking the meatballs. Putting raw meatballs in sauce and simmering all day. Using Turkey meat. Using meatloaf meat mixture. Each time was ok, but never that taste I remember as a kid. 

As of a month ago, I finally perfected the recipe!
My husband and kids have commented on saying these are the best!

Now I am sharing with you!


Ingredients:
2.5 Pounds Ground Beef
3 Cups Italian Seasoned Bread Crumbs
2 Large Heaping Teaspoons of Chopped/Minced Garlic
1 Egg
2 Tablespoons Parsley Flakes
1 Teaspoon Kosher Salt
1/2 Teaspoon Black Pepper
3 Tablespoons Grated Pecorino Romano Cheese
1/4 Cup Milk
3 Jars of Marinara Sauce


Start by adding meat to a large bowl


Next add the egg


Then Salt, Pepper & Garlic


Grated Cheese


Breadcrumbs


Mix.


Have a large fry pan ready. Spray with Vegetable Oil.


Start rolling the meatballs and add to the pan.


Turn Heat to medium- high.
Brown on all sides.




Once browned, if this is too large of a batch of meatballs for 1-2 nights, 
than put extra meatballs in a resealable plastic bag and freeze.
To use after frozen, take out of the plastic bag and place on 
microwaveable safe plate and put in microwave for 
approximately 5 minutes or until hot.

If planning on using entire batch, 
add 3 jars of marinara sauce.


Add 2 -3 Tablespoons of grated cheese.
Mix.
Turn Heat down to Low-Medium.




Cover and simmer for 1-2 hours.
Stir occasionally. 



Cook macaroni according to package.
(I cooked 1 pound of macaroni.)
Add to the sauce.
Mix well and serve.

We added a side salad to the meal.


We had plenty leftover for another night.
As you have read, sometimes I like to cook enough for 2 nights!
